Welcome from Lauren
I have many passions in life. First, as a working journalist for more than two decades I found my niche in health reporting. That led to a greater desire to learn everything I can about nutrition. I truly believe we are what we eat. As a Certified Holsitic Health Coach educated by the Institute for Integrative Nutrition in NYC, I am on a mission to spread the word that we can change our lives by altering our diet, exercise routine, lifetsyle, and relationships. I have had the privilege of interviewing dozens of health experts, from dieticians, to doctors, fitness trainers to wellness practitioners. I have covered countless stories on disease, weight loss, alternative medicine, and workout routines. It’s led me down my own path of self discovery. I’ve worked with numerous health organizations over the years to help fight cancer, heart disease, diabetes, and obesity. Now I want to help you. Join me as we journey together to feel younger, more vibrant, happier, and living off what mother earth intended for us.

Energizer Smoothie
2 cups spinach
1 cucumber peeled
1 large apple
Handful Italian parsley
dash fresh ginger
dash fresh lemon juice
Mix in blender.
Spinach Souffle
2 bags frozen organic Spinach
1 cup chopped mushrooms
2 diced leeks
rice cheese.
4 egg whites
Gluten Free Bread Crumbs
Saute leeks in olive oil. Add mushroooms and saute until soft. Add spinach.
Pour into pyrex dish and add egg whites. Spinkle rice cheese on top
and gluten free bread crumbs are optional.
Bake at 350 degrees until brown on top.
Hummus
1 can edens garbanzo beans no salt
minced garlic
lime juice
dill
Mix all ingredients in Cuisinart.
Ginger Dressing
1/2 minced onion
2 TB minced celery
2 TB minced carrot
1/2 cup olive oil
1/3 cup rice vinegar
2TB minced ginger
1/2 tsp minced garlic
2 tsp lemon juice
4 tsp gluten free Tamari
Mix in blender.
Coconut Curry Soup
1 green pepper
3 green onions minced
5 baby carrots chopped
1 TB agave nectar
2 TB red curry paste
Splash of lime juice
Splash of fish sauce
1 can unsweetened coconut milk
Some cilantro
Optional Shrimp or Tofu
Saute carrots, onions, pepper in olive oil, when soft add curry paste, saute couple minutes.
Add coconut milk and simmer.
Add fish sauce, agave, cilantro, shrimp.Remove from heat add lime and serve.
Roasted Veggies
1 rutabega
1 daikon
1 turnip
1 burdok root
1 fennel bulb
2 beets
1 sweet potato
Dice and place on cookie sheet and rub with olive oil.
Bake at 350 degrees until starts to brown.
Apple Treat
Dice apples, add cinnamon and bake at 350 degrees.
Top with coconut milk, yogurt or low sugar greek yogurt.
